Happy Thanksgiving from The University of Olivet. May your home be filled with laughter, happiness and a few “slices” of fun along the way!

In honor of Thanksgiving and the mighty Oaks that stand on the Olivet Campus, Clyde and Haley, with a bit of help from Landen Cooley, have a treat for you: Olivet Acorn Pie. Enjoy!

Olivet Acorn Pie Recipe

Makes 1 pie

Ingredients
1 pre-baked 9 inch pie crust

2 and ½ cups acorns, boiled and chopped

5 tbs butter, melted and slightly cooled

½ cup packed brown sugar

1 tbs all-purpose flour

2 tsp vanilla extract

½ tsp sea salt

3 large eggs, at room temperature

1 cup maple syrup

Instructions

Preheat the oven to 350F.

After pre-baking your pie crust, spread the acorns inside and set aside.

Whisk the melted butter, brown sugar, and flour together in a large bowl until combined and thick.

Whisk in the vanilla extract, salt, eggs, and maple syrup until combined. Pour evenly over the acorns.

Bake the pie for 40-50 minutes, or until the top is lightly browned.

Remove the finished pie from the oven and sprinkle sea salt on top. Place on a wire rack to cool completely.

The pie filling will set as it cools.
